Also known as dinkel flour or hulled wheat, organic spelt wholegrain flour is milled from spelt, an ancient species of wheat cultivated since 5000 BC. Commonly used for spelt breads, pasta, pizza dough, pancakes, and traditional sourdough. Spelt contains gluten in a form many people find easier to digest than common wheat, and the wholegrain flour retains the bran for higher fibre and a nutty, slightly sweet flavour.
